Carrot Cake Cookies

Why not make carrot 🥕 cake into cookies 🤔 With spice of ginger and cinnamon and a little sweetness of coconut sugar, these carrot cake cookies have it all. Plus with the sneaky veggies you can even eat these for breakfast.

Carrot Cake Cookies


Ingredients

1 1/2 cup of wholewheat spelt flour (feel free to use mixture of white spelt flour too) 1/2 cup coconut sugar 1 teaspoon cinnamon 1/2 teaspoon ginger 1/2 teaspoon salt 1 teaspoon baking powder Mix together wet ingredients in separate bowl: 1 cup shredded carrots 1/2 cup milk alternative (oat, soy, almond, etc) 1/4 cup olive oil or sunflower oil

1/2 cup chopped walnuts

1/2 cup raisins


Method

Mix wet ingredients with dry ingredients until combined. Fold in 1/2 cup chopped walnuts and 1/2 cup raisins. Add a spoonful of mixture to greased or lined baking sheet and bake at 290c / 375f for 18-20 minutes or until brown around edges.
