Picky Eater Vegetable Sides

Introducing new food can take some time - right!? And actually we are all picky in our own ways. We have opinions and preferences especially when it comes to our tastebuds. But, here are 4 different vegetable sides that those opinionated tastebuds may even like. Carrots and butternut squash already have a sweet flavour so it's just about enhancing the taste. Parsnips and cauliflower may not be as brightly coloured as other food, but they contain phytonutrients. This helps us fight off diseases and makes our bodies work properly. Sweet Butternut Squash Cubes

Sweet butternut squash cubes

Ingredients

1 medium butternut squash

2 tablespoons liquid sweetener (honey, maple syrup, agave)

1/2 teaspoon salt

1.5 tablespoon olive oil

1 teaspoon coconut oil melted (or butter)

An optional sprinkle of cinnamon


Method

  1. Heat oven to 200c / 400f.

  2. Mix all ingredients except butternut squash into a medium bowl.

  3. Peel skin and dice butternut squash into small cubes.

  4. Add squash to your mixture and evenly coat it.

  5. Spread out squash onto a baking tray and roast for about 40 minutes or until soft and browned. Flip halfway in between.



Orange Glazed Carrots

Orange glazed carrots

Ingredients

4 large carrots, thinly sliced in circles

2 tablespoons of coconut oil (or butter)

1/2 cup water

1/4 cup of orange juice

2 tablespoons of maple syrup or honey

1/4 teaspoon salt

An optional sprinkle of cinnamon


Method

  1. Add all ingredients to a saucepan over medium-high heat.

  2. Cook carrots for about 25 - 30 minutes stirring occasionally. The carrots should be tender and the sauce will reduce to a glaze. Add extra water if necessary.



Parsnip Chips (Fries)

Ingredients

3 large parsnips, peeled and cut into even slices

2 tablespoons of olive oil or avocado oil

1/2 teaspoon sea salt or flavoured salt

2 tablespoons of finely grated parmesan cheese (can substitute for cheddar)

An optional sprinkle of garlic powder


Method

  1. Heat oven to 200c / 400f.

  2. Mix all ingredients except parsnips and cheese into a medium bowl.

  3. Coat parsnips in the mixture.

  4. Transfer parsnips to a baking tray and sprinkle half of the cheese on top.

  5. Bake in the oven for 15 minutes. Carefully flip parsnips and sprinkle the remaining cheese on top. Bake for another 15 minutes or until crispy.


Cauliflower Popcorn

Cauliflower popcorn

Ingredients

1 medium head of cauliflower, broken into small pieces (resembling popcorn)

1 tablespoon of olive oil

1/2 teaspoon sea salt or flavoured salt

An optional sprinkle of garlic powder


Method

  1. Heat oven to 200c / 400f.

  2. Mix together olive oil, salt and optional garlic powder into a medium bowl.

  3. Carefully toss the cauliflower in the mixture coating completely.

  4. Transfer cauliflower onto a baking tray and bake for 16 - 20 minutes or until golden.
